QUINOA BROCCOLI BITES
1 Cup of Quinua (cooked)
1 small head of broccoli and the stem
2 Cups of cooked Quinua
1 Tbs of olive oil , plus extra for frying
1 Tbs of nutritional yeast (optional)
2 Tbs of quinua flour ( you can replace it with other flour )
*Tream your broccoli stalk leaving only the center part and roughly chop it together with the florets .
*Steam it for about 5-7 Minutes
*Add it to the food procesor with the nutritional yeast , cumin ,salt and garlic powder .
*Mix together with cooked quinoa , oil and form little patties .
*Heat a tablespoon of olive oil in a non-stick fry pan ,Make sure your pan is not too hot , medium heat is the best and fry your patties both sides for 6-8 minutes until golden brown .
* Serve with vegan mayo and a sprinkle of smoky paprika .
