Sprouted lentil , white bean and barley stew
1 cup of sprouted lentils
1/2 cup pearl barley ( preferible organic )
1/2 white bean soaked
1 small garlic clove
1 medium size white chopped onion
1 medium size chipped tomato.
2 cups of veggie stock
1 tsp cumin seeds
1/2 tsp of turmeric
1 tsp cayenne pepper
Salt and pepper to teste
2 table spoon of good quality Olof el oil .
OPTIONSL GARNISH : Avocado , coriander , fermented cabbage .
Heat olive oil in a soup pot over medium heat and add chopped garlic and onion a sauté ultil onions are soft an translucent , aboiut 3-4 mn .
Add tomatoes ,spices , salt and sauté for a couple of more minutes .
add lentils , beans and barley stirring frequently
Add the vegetable stock and bring to boil for about 10 mn . Once The grains are soft , reduce heat and cover with lid for another 7-10 mn stirring and scraping the Botton of the pan so it don't burn .
Taste if is well seasoned and adjust if need it .
