Pearl Barley and Alborio Rice Risotto
4 -5 cups of vegetable stock
1 Cup arborio rice
1 1/2 cup of pearl barley
1 onion finely diced
2 tbsp of loose oil
Vegan butter (optional )
Vegan cream (optional )
Sauté the diced onions in a pan with olive oil for about one minute , add rice and sauté for another minute until transluside , here you can add a little drizz of white wine or champagne if you have anything open But is not necessary , it just add a little extra flavor , reduce fire and start adding the stock but little quantities ,stir frequently to avoid rice sticking to the pot , add more liquid each time is absorbed ,repit this procen until rice is al aldente (my preference ) or until the desired texture ,this process will take you a good 15-20 mins .
Season with salt and pepper and add the Sparagus .
Here if desired add cream or Vegan butter for extra creaminess or just a touch of olive oil will work well too .
