Brown Rice And beets spaghetti almond coriander Pesto
1 handful of fresh Organicly grow coriander leaves washed
1 garlic clove
One handful of nuts (pine,chashews or almonds ) if you use cashews or almonds pls soak and dehydrated )
6 Tbsp extra virgin olive oil
Half of the juice of a medium size lemon
259 gr of the pasta of your choice
Salt and pepper to teste
- Put the coriander and olive oil in a food processor and blend until well combined , add the garlic , nuts , and lemon juice and proceess until your desired consistency , recommended ratio 3:1 oil to juice , but you can vary this as per your preferences .
- Cook the pasta according to the instructions on package , serve with the pesto when the pasta is hot , so that it Melts ,sprinkle some grated walnut for a little extra texture .
